Well Hello There...

Hey,
   Dear very few readers. I sincerely apologize for the lack of posts on this blog. I had really hoped it would be a success and help many of you with interest in the topic. However, I have graduated since starting this blog and I have had no real time to work on it or for trying out the recipes. It turns out that grown up life is hard and takes up a lot of free time lol. I have set out on new adventures and urge you to take a look at the other blogs I will now be turning my attention to! Cheesy Crock Pot Chicken


I am so excited that I actually have two successful entrees now under my belt. I really don't know why I haven't done this sooner. It's so simple to make great meals with very little in a dorm room! My latest endeavor has been cheesy chicken. I was sure exactly how this was going to taste, but I decided to give it a try! I think it turned out pretty good. The chicken wasn't dry at all and it was just the right amount of cheesiness. It was a little too salty, but tat was actually my fault not the recipe's because I added too much salt. It wasn't too salty because it was still quite edible, just a little more salty than perfect. So here is the recipe and my cheesy chicken!


INGREDIENTS
3 boneless chicken breasts
salt
pepper
garlic powder
2 cans of condensed cream of chicken soup
1 can of condensed cheddar cheese soup

PREPARATION
First, wash your chicken. This is a very important step. Next, cut each chicken breast down the center so that you have 6 half breasts. Place all six half breasts in the bottom of the crock pot. next season them to your preference with the pepper, salt, and garlic powder. Make sure this is where you are careful and that you know what you like because i got a tid bit salt crazy. Next, in a separate bowl, pour both cans of the cream of chicken soup and the can of cheddar cheese soup and mix them together. Pour the soup mixture over the top of the chicken. That's it! Put your crock pot on low and let it cook 6 to 7 hours.

Like i said, this was super easy. When it was done, the chicken was almost shredded it was so moist. it was not dry at all. About 30 minutes before it was done, I made some rice and then poured my cheesy chicken over the top of it to make somewhat of a cheesy chicken casserole. It should definitely last me several meals even with my boyfriend eating it. He was the end of the pot roast from my last post. Anyway, this is a great option to keep for left overs which means less money spent on meals! If you have any suggestions on what I should cook next, let me know in a comment!

BBQ Pot Roast for The Crock Pot


For my first ever venture into the world of the crock pot, I decided to make a favorite of mine; pot roast! I was a little bit scared because this was my first time ever using my crock pot and second pot roast just sounds a little intimidating. It ended up being a huge success and tasted really good! I definitely urge you to try this recipe because it was really good and a pot roast will be enough food for several meals which is perfect for a broke college student in the dorms. So here is the recipe and my pot roast!


INGREDIENTS
2-3 pound chuck roast
10 small red potatoes cut up
10 carrots cut up
1 onion sliced
1 bottle of BBQ sauce

PREPARATION
First what you want to do is wash your meat and place it in the bottom of you crock pot. Even though the recipe doesn't call for it, I rubbed soy sauce on the roast for flavor because i've seen my mom do that. Next, cut all of the vegetables to your liking. I actually left out the onion because i don't like them and I added more carrots because I love them. Sprinkle your vegetables over the top of the meat inside your crock pot. Lastly, top your vegetables and meat with the entire 18 ounce bottle of BBQ sauce. There you go thats it! Now just set your crock pot to low and wait 8 hours.

When this was done, it was incredible. The meat was so tender it was literally falling apart. I served it with the vegetables and also made some super easy blueberry muffins to go with it. It was a muffin mix that I purchased at Walmart for like a dollar and all I had to do was add milk!

Definitely try this out because it was worth the 8 hour wait and it is money saving because it lasted for like 4 meals!

My Challenge

I am a college student. I feel as though most anyone who is in college or has ever been in college can vouch for me when I say that the college diet is not to healthy. Lets think along the lines of ramen noodles and vending machine dinners.

I previously had a meal plan that allowed me to eat meals on campus, but to to funding, I had to give that up and opt for an approach that I have never known before thanks to mom's home cooked meals. Its called fending for yourself.

I have noticed, as I am sure all of you have as well, Pinterest is getting to be the new popular site to be on. I noticed that it is a great outlet for finding easy recipes that can easily be replicated in a college residence hall.

I have decided to give myself a challenge much like that in Julie and Julia as viewed below.



Here is my challenge. As a broke college student with little cooking knowledge, a very low budget, and minimal cooking supplies, I will use my crock pot to create great meals that I find on Pinterest. I am going to prove that, just because I am in college, I don't have to eat ramen noodles. I can enjoy good and healthy meals. I will post all of the recipes in which I make and critique them on this blog for you to replicate too!
